Forno Pasticceria VentilatoThermo-ventilated pastry oven with a baking chamber paneled in stainless steel, suitable to accommodate a removable rack with 9 40x60 cm trays and low speed ventilation. Thanks to the adjustable fins which allow to regulate the air passage within the chamber, the products will always have uniform baking.  Additionally, thanks to the mineral wool insulation which prevents heat dispersion, the temperature inside the oven is always constant thus allowing professional baking while saving on energy consumption. Underneath the baking chamber, the oven is fitted with a proofer, while on the upper part it is equipped with a static baking chamber with bed plate in refractory material, ideal for baking of the product on the bed plate or on a tray. The oven is completed with an exhaust hood.
